Welcome back again and today I wanted to share my activities in the kitchen. Today my team is different. I was grouped together with Inces, Pipi, Chan, Maicye, and Iskandar.




Today we made Lapis Legit cake and feed our sour dough.  Lapis legit is a type of Indonesian layer cake. But it was developed during colonial times in the Dutch East Indies. This cake has a firm texture and had multi-layered spit cake. In Indonesian, layer cake usually being steamed but this cake is being baked and contains Spekkoek spices. Spekkoek spices is a mix of Indonesian spices, such as cardamon, cinnamon, clove, mace and anise. This cake is made from flour, yolk, and rich in butter or margarine. Lapis legit commonly has more than 18 layers, baking it requires patience and is a very labour-intensive process.

This is the recipe of Lapis Legit cake

Ingredients :

  • Butter or margarine                      560 g
  • Condens milk                                   2 tbsp
  • Egg yolk                                         30 pcs
  • Icing sugar                                    410 g
  • Flour                                             225 g
  • Milk powder                                   75 g
  • Spekkoek spices                             10 g
  • Cocoa powder                                10 g

How to make :

  1. Beat butter until smooth and creamy.
  2. Pour condens milk and mix well.
  3. Add eggs yolk one by one mix with low speed until well blended.
  4. Add icing sugar little by little and mix with low speed until well blended.
  5. After batter is smooth add milk powder and flour together and mix until smooth.
  6. Divided batter into 2 portion. First portion is just white batter and second batter mix with spekkoek spices and cocoa powder.
  7. Grease pan and pour the white batter.
  8. Bake using different temperature between below (170oC) and above (210oC) about 3 minutes every layer.
  9. After the previous layer already set in surface, then pour the different batter and bake again.
  10. Repeat it until the batter run out and after that bake it at 180oC about 10-15 minutes.
P.S.
But actually we didn't baked it when we made layers. We using salamander because our oven is so big.
Yet, it's same. Don't be worry.

About sour dough is like yesterday. Because we made dough at 11.45 A.M , so we gave it food in the same time every single day in 1 week.
