Bolu kukus day
Today was very busy day, because we had to made 600 pax sweet breads and 20 ring sponge cakes and also our obligation to made Pia legong, Baguette using sour dough starter and bolu kukus every group.

This sourdough baguette reaaaaaaaaaalyyyyy takes a lot of time for proofing it. We still stay in the campus for making this bread.. But it was not in vain, because the texture of the bread it makes me statisfied. Even thought the shape of the bread is ugly.. I am so sorry..






 My group already made toast bread using sour dough starter yesterday so we didn't had to make it anymore but we didn't make pia legong today, we were so sorry, sir.

Actually this bread must be proffing about more 2 hours, but yesterday it was already dark and so scary so, I am so sorry. The result it's not like the expectation.



 And for tape we looking for it , hopeful it will gonna be Oishi-desu. Today I checked the tape, the smells slightly like alcohol. And be happy I will share the recipe about what product we made for this week.



White Pan Sourdough Bread

Starter                     110 gr
Bread flour             250 gr
Sugar                        15 gr
Salt                             5 gr
Fresh milk                80 ml
Olive oil                   20 ml
Water                      100 ml


How to make :

  1. Mix all ingredients using your hands ok. Don't pour water all in the first because the texture of flour it's not same everywhere, everytime. So pour little by little.
  2. After the ingredients merges. Place the dough in the clean bowl and rest about two until three hours in room temperature.
  3. Next, Knocking down dough and place it in chiller one night.
  4. Tomorrow, dusting surface of the dough, knocking down again, mix until the surface smooth. 
  5. Roll it like making toast bread, place it in the mould and punch down dough until there's no air in the dough. Place it in the room temperature about three until four hours and bake at 190 degrees C in the first ten minutes.
  6. After that lower it at 180 degrees C about 15 minutes or until brown.






Sourdough French Bread

All purpose flour                  495 gr
Salt                                          11 gr
Starter                                   100 gr
Water                                    305 ml


How to Make :
  1. Mix all ingredients using your hands ok. Don't pour water all in the first because the texture of flour it's not same everywhere, everytime. So pour little by little.
  2. After the ingredients merges. Place the dough in the clean bowl and rest about two until four hours in room temperature.
  3. Knocking down and divided the dough into two parts.
  4. Flatten and fold it. Rest in room temperature about 20-45 min.
  5. Knocking down roll it like making french bread. Place it in sheet pan and rest it one until two hours.Notch the surface of the dough and dusting with flour to prevent browning too much.
  6. Bake at 190 degrees C about 20 minutes.
  7. The more dough takes times the more better result you've got.





Colorful Bolu Kukus


Egg                            9 pcs
Sugar                   2000 gr
Tbm                         75 gr
Water                     700 ml
Soda                      700 ml
Soft Flour            2000 gr

How to Make :

  1. Mix Egg, sugar, and tbm together until foamy and the sugar dissolved.
  2. After that pour water, Mix well. After that pour soda and mix again.
  3. Add flour little by little mix until smooth.
  4. Divided the batter, add food coloring into the batter, mix until well.
  5. Pour the original batter and pour little bit the colored batter on the top.
  6. Steamed it 15 minutes and it's done !!.
